When Housewifery Doesn't Work Out So Well

I find that having shredded chicken and chicken stock in the freezer help me throw a lot of recipes together quickly. So I frequently buy a whole chicken or two to roast (either in the oven or the crockpot), shred the meat and use the carcass as the base for stock. This works quite well most of the time, but not so much when you roast up two beautiful birds and then go to bed leave them sitting on top of the stove all night long. Sigh.

I have done this type of thing! So frustrating. I put chicken in the crock pot one night before bed thinking I'd put it in the fridge next am and that evening a quick reheat and I can toss dinner together.

Left for work next morning with chicken STILL COOKING. It was jerky when I got home. sigh

That sounds like me!! I was just thinking today I needed to throw together some shells/cheese and freeze. I can get 3 meals out of a batch for my family and it makes life so easy!!

That is totally something I would do - feeling organized and ahead of the game and then finding I messed it up. LOL
